I had the exact dilemma the other day, I was craving for cake. Big time. And I did not have anything sweet at all in my pantry. Let me just go back a little bit, I have been trying to lose some weight and after trying out a three day cleansing thing, I finally lost about 5 pounds. I've been trying to eat healthier and lessen my sugar intake so I have refrained from buying sweets.
A girl can only go too long enough without any sweets, right? I could not take it any more, I gotta have my cake fix and I needed it like yesterday. I went to Pinterest and searched for "cake in mug" and out popped out all these wonderful photos of cakes in mugs. Lovely!
This chocolate cake in a mug surely hit the spot for me. It was ready in five minutes, prep time included. Talk about instant gratification. The texture is not exactly the same as regular cake but the gooey melted chocolate in the bottom, totally makes up for it.
The recipe was supposed to be for two servings but I did not realize that until the cake was all done. It all fitted in one cup though, just saying. But just going through the list of ingredients - 4 tbsp of sugar, 3 tbsp. oil, 3 tbsp. choco chips, oh yeah, this cake is meant to be shared. You can mix the batter in a small bowl and then divide it between two cups. Cooking time should be lessened as well, start with 30 seconds and see from there.
Cooking times will vary depending on the microwave. I cooked mine for 2 minutes and it was perfect. It is best eaten warm, for it does harden a bit once cold. I just ate half of it (out of guilt) and ate the other half the next day. I nuked it again in the microwave for about 20 seconds and the chocolate melted again and it was okay.
