This cream cheese frosting recipe is absolutely delish with carrot cake , red velvet cake, chocolate cake or on its own! This recipe is enough to fill and frost the top of two layers 9" carrot cake. To cover the whole cake, make 1 1/2 the recipe. I have used both regular and light cream cheese. Both turned yummy...
8 ounces cream cheese, softened
1/2 cup butter, softened
2 cups confectioners' or powdered sugar
1 teaspoon vanilla extract
In a bowl beat together cream cheese and butter until creamy.
Add in icing sugar and beat for a minute. Add vanilla.
Scrape down the sides of the bowl and beat for another minute.
Yield: approx. 3 cups
